Ingredients

  • 4 cups sugar
  • 1 teaspoon butter
  • 1 cup milk
  • 1/4 teaspoon cream of tartar
  • 1 cup coconut
  • vanilla
  • cocoa

Instructions

  1. Combine sugar, butter, milk, and cream of tartar in a saucepan.
  2. Bring to a boil and cook for 10 minutes, stirring constantly.
  3. Remove from heat and beat in 1 cup of coconut and a few drops of vanilla essence.
  4. Stand the mixture in cold water and beat until it thickens.
  5. Pour half of the mixture into a buttered plate.
  6. Color the remaining half with cocoa or cochineal and pour it on top.
