Coconut Key Lime Bars

- Preheat oven to 350°. Blend butter, salt, powdered sugar and 2 cups flour to make soft dough. Press evenly into 9 x 13 (ungreased) pan. Bake 15 to 20 minutes, until golden. Combine eggs, lime peel, lime juice, sugar, food coloring and 1/4 cup flour and blend until smooth. Pour over baked crust. Sprinkle with coconut. Reduce heat to 325° and bake 25 minutes, until firm. Cool. Slice into bars.
