Coconut Key Lime Bars

Ingredients

  • 1 c. butter, softened
  • 1/4 tsp. salt
  • 1/2 c. powdered sugar
  • 2 c. flour
  • 4 eggs, slightly beaten
  • 1 tsp. grated lime peel
  • 5 Tbsp. lime juice
  • 2 c. granulated sugar
  • 1/4 c. flour

Instructions

  1. Preheat oven to 350°. Blend butter, salt, powdered sugar and 2 cups flour to make soft dough. Press evenly into 9 x 13 (ungreased) pan. Bake 15 to 20 minutes, until golden. Combine eggs, lime peel, lime juice, sugar, food coloring and 1/4 cup flour and blend until smooth. Pour over baked crust. Sprinkle with coconut. Reduce heat to 325° and bake 25 minutes, until firm. Cool. Slice into bars.
