Ingredients

  • 1 1/3 c. coconut
  • 2 Tbsp. all-purpose flour
  • 2 egg whites
  • maraschino cherries
  • 1/3 c. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. almond extract

Instructions

  1. Combine coconut, flour, sugar, and salt in a bowl.
  2. Stir in beaten egg whites and almond extract; mix well.
  3. Lightly grease a cookie sheet.
  4. Cut cherries into quarters.
  5. Drop by teaspoonful onto the cookie sheet about 1 inch apart. Top each with a cherry.
  6. Bake at 325° for 20 to 25 minutes, or until edges are golden.
