Ingredients

  • 2 c. cooked yellow squash
  • 2 Tbsp. butter
  • 1 c. milk
  • salt
  • pepper
  • 4 egg whites

Instructions

  1. Cut squash into cubes and cook in lightly salted water until tender, then drain.
  2. Add butter and mash until smooth. Stir in well beaten egg whites, milk, and cracker crumbs.
  3. Pour the mixture into a Pam-sprayed casserole dish and cover with cheese.
  4. Bake at 350°F until firm in the center, approximately 30 to 45 minutes.
