Ingredients

  • 2 c. sugar
  • 2 c. water
  • 1 1/2 c. coconut
  • 1 stick margarine
  • 3 eggs, beaten

Instructions

  1. Boil sugar and water together for 20 minutes.
  2. Slowly add coconut and margarine to the mixture.
  3. Let the filling cool.
  4. Add beaten eggs to the cooled mixture.
  5. Fill 16 unbaked tart shells with the coconut filling.
  6. Bake at 350°F until the filling is set.
