Codfish Balls
Golden fried codfish balls with tender potatoes and savory flavors, perfect as an appetizer or main dish for seafood lovers and those craving crispy bites.

- Cut salt codfish into strips and place in a medium saucepan with 1 1/2 to 2 cups water. Bring to boiling.
- Reduce heat and simmer, uncovered, for 5 minutes. Drain.
- Separate fish into small flakes.
- Place in a medium saucepan with diced potatoes and 1 1/2 cups water. Bring to boiling.
- Boil gently, covered, for 15 minutes or until potatoes are tender. Drain well.
- In a medium bowl, beat the fish mixture until very smooth using an electric mixer at medium speed.
- Add egg, butter, and pepper; beat until well combined.
- Heat salad oil or shortening in an electric skillet or heavy saucepan to 385°F (deep frying thermometer).
- Gently drop heaping tablespoonfuls of the fish mixture into hot oil, 5 or 6 at a time.
- Fry until golden brown, about 1 minute per batch.
- Remove fish balls with a slotted spoon and drain on paper towels.
