Ingredients

  • 1/2 lb. salt codfish
  • 2 1/2 cups diced pared potatoes
  • 1 egg
  • 2 teaspoons butter or margarine
  • 1/4 teaspoon pepper
  • Salad oil or shortening

Instructions

  1. Cut salt codfish into strips and place in a medium saucepan with 1 1/2 to 2 cups water. Bring to boiling.
  2. Reduce heat and simmer, uncovered, for 5 minutes. Drain.
  3. Separate fish into small flakes.
  4. Place in a medium saucepan with diced potatoes and 1 1/2 cups water. Bring to boiling.
  5. Boil gently, covered, for 15 minutes or until potatoes are tender. Drain well.
  6. In a medium bowl, beat the fish mixture until very smooth using an electric mixer at medium speed.
  7. Add egg, butter, and pepper; beat until well combined.
  8. Heat salad oil or shortening in an electric skillet or heavy saucepan to 385°F (deep frying thermometer).
  9. Gently drop heaping tablespoonfuls of the fish mixture into hot oil, 5 or 6 at a time.
  10. Fry until golden brown, about 1 minute per batch.
  11. Remove fish balls with a slotted spoon and drain on paper towels.
