Coffee Walnut Loaf

Ingredients

  • 2/3 cup walnuts, toasted
  • 8 tbsp (1 stick) butter, chopped
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 tbsp plus 2 tsp instant coffee granules
  • 1 1/2 cups self-rising flour
  • 2 tsp ground cinnamon
  • 2 None eggs, lightly beaten
  • 2 tsp butter

Instructions

  1. Preheat the oven to 325°F. Grease an 8 x 5-inch loaf pan. Line bottom and long sides with parchment paper, extending paper at long sides for handles.
  2. Chop half of the nuts.
  3. Stir butter, sugar, milk and 2 tbsp coffee in small saucepan on low heat until smooth. Sift flour and cinnamon into large bowl. Stir in butter mixture, eggs and chopped walnuts. Pour mixture into prepared pan.
  4. Bake 15 mins. Sprinkle with remaining nuts. Bake further 30 mins until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
  5. For the coffee icing, combine 1 tbsp boiling water, remaining 2 tsp coffee and butter in small heatproof bowl. Stir in sifted powdered sugar to form a firm paste. Place bowl over small saucepan of simmering water; stir until icing is spreadable. Drizzle icing over loaf.
