Coffee Walnut Rolls

Ingredients

  • 2 1/4 cups self-rising flour
  • 2 tbsp granulated sugar
  • 3 tbsp cold butter, chopped
  • 1 cup milk
  • 3 tbsp butter, melted
  • 1/3 cup firmly packed brown sugar
  • 1/2 tsp ground cinnamon
  • None None FOR THE ICING
  • 1 tbsp instant coffee dissolved in 2 tbsp warm water
  • 1 tbsp sour cream
  • 2 cups powdered sugar, sifted
  • 1/2 cup chopped walnuts, to sprinkle

Instructions

  1. Preheat the oven to 350°F. Line a baking pan with parchment paper.
  2. Sift flour and a pinch of salt into a large bowl. Stir in sugar. Using your fingertips, rub in butter. Pour in the milk. Using a spatula, bring the dough together using a cutting motion.
  3. Turn dough onto a floured surface. Roll out to a 12 x 8-inch rectangle.
  4. Combine melted butter, brown sugar and cinnamon in a small bowl. Sprinkle over the dough. Roll up dough from the long side. Cut into 6 pieces. Place one roll on the prepared pan and then place the remaining rolls around it so that they just touch.
  5. Bake for 15-20 mins. Cool slightly. For the icing, combine coffee mixture, sour cream and powdered sugar in a medium bowl. Drizzle over warm rolls and sprinkle with chopped walnuts.
