Instructions
- Grind the flax seed in a blender, food processor or coffee grinder.
- Mix it with the water and let sit while you grate the orange peel.
- Add the orange peel.
- Combine the applesauce and the sugar.
- Add to the flax/orange mixture.
- Combine the flour, sugar, baking powder, salt, cinnamon and coconut in a medium sized bowl.
- Add the carrot and stir.
- Pour the flax/orange/applesauce/sugar mixture into the dry ingredients and stir until just combined.
- Don't over stir.
- Drop by tablespoons onto greased baking sheet.
- Bake at 375 for 13 minutes or so.
