Ingredients

  • 1 large cucumber (unpeeled), sliced thin
  • 1 Tbsp. salt
  • 3/4 c. sugar
  • 1 medium green pepper, sliced
  • 1 medium onion, sliced
  • 1 tsp. celery seed
  • 1/2 c. white vinegar

Instructions

  1. Combine cucumber, green pepper, and onion in a bowl.
  2. Sprinkle with salt and celery seed.
  3. Combine sugar with vinegar until dissolved and pour over the vegetables.
  4. Stir gently to blend.
  5. Cover and refrigerate overnight.
