Cold Asparagus

Ingredients

  • 1 bunch fresh asparagus
  • red or green leaf lettuce
  • 1 jar sliced pimientos
  • alfalfa sprouts
  • balsamic vinegar
  • ground pepper

Instructions

  1. Cut off hard ends of asparagus; boil spears for 5 minutes. Place lettuce leaves on a dish.
  2. Place pimientos over the lettuce (drain oil).
  3. Place 5 asparagus spears on top of lettuce and pimiento.
  4. Top asparagus with a clump of sprouts.
  5. Chill in refrigerator for 1/2 hour.
  6. Pour balsamic vinegar to taste over asparagus.
  7. Sprinkle ground pepper to taste.
