Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 5 eggs
  • 3/4 cup grated lemon (juice)
  • 1 1/2 cups sugar

Instructions

  1. Sprinkle unflavored gelatin over cold water to soften.
  2. Mix egg yolks with lemon juice, lemon rind, and 3/4 cup of sugar.
  3. Place the mixture in a double boiler over boiling water and cook, stirring constantly, until slightly thickened (about 8 minutes).
  4. Remove from heat and stir in the gelatin until dissolved.
  5. Chill for 30 to 40 minutes.
  6. Beat egg whites until they hold their shape, then gradually add 3/4 cup sugar until whites are stiff.
  7. Beat cream until stiff; fold whites and cream into the yolk mixture.
  8. Pour into a 2-quart souffle dish and chill for 4 hours or more.
  9. Top with whipped cream before serving.
