Ingredients

  • 1 cup oatmeal
  • 1 1/2 cups water
  • 2 tablespoons coffee
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 3/4 cup oil
  • 2 cups flour
  • 3 tablespoons cocoa
  • 1 1/4 teaspoons baking soda
  • 3/4 teaspoon salt

Instructions

  1. Soak oatmeal, water, and coffee together for 20 minutes.
  2. Add brown sugar, white sugar, eggs, vanilla, and oil to the oatmeal mixture and mix well.
  3. Sift together flour, cocoa, baking soda, and salt.
  4. Add the sifted dry ingredients to the wet mixture and stir until combined.
  5. Pour the batter into a greased Bundt pan.
  6. Bake at 350°F for 55 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before removing from the pan and serving.
