Ingredients

  • 2 (6 1/2 oz.) cans minced clams, undrained
  • 1 small onion, chopped
  • 4 medium potatoes, finely diced
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. chopped celery
  • 2 Tbsp. margarine
  • 4 c. skim canned milk
  • 2 Tbsp. cornstarch

Instructions

  1. Place all ingredients except milk and cornstarch in a Dutch oven.
  2. Bring to a boil, then reduce to a simmer until potatoes are tender.
  3. Mix cornstarch with cold water until dissolved.
  4. Pour the cornstarch mixture into the clam mixture.
  5. Add the milk.
  6. Simmer until the soup thickens, stirring often.
  7. Do not boil after adding the milk.
  8. Serve immediately.
