Cold Melon Soup

Ingredients

  • 1 large ripe cantaloupe
  • 1/4 tsp cinnamon
  • 1/2 cup orange juice
  • 2 cups orange juice
  • 3 tsp lime juice

Instructions

  1. Remove seeds from the melon; peel and cut into cubes.
  2. Place the melon pulp, cinnamon, and 1/2 cup orange juice into a blender and puree until smooth.
  3. Combine the remaining 2 cups orange juice and lime juice; stir into the melon puree.
  4. Pour the mixture into a bowl, cover, and refrigerate for at least one hour before serving.
