Ingredients

  • 2 cups white sugar
  • 4 cups white sugar
  • 2 cups evaporated milk
  • 1 stick butter
  • 1/4 teaspoon baking soda
  • 2 cups black walnuts

Instructions

  1. In a small pan, caramelize 2 cups of white sugar.
  2. In a large kettle, mix 4 cups of white sugar, evaporated milk, and butter.
  3. Let this mixture come to a boil, stirring constantly while the sugar is caramelizing.
  4. Pour the caramelized sugar into the boiling mixture and stir well.
  5. Cook to the hard ball stage (hard boil stage).
  6. Remove from heat and add 1/4 teaspoon of baking soda.
  7. Beat in thoroughly and let set for 20 minutes.
  8. Add black walnuts and pecan halves.
  9. Beat until thick enough to spread.
  10. Cool and cut into pieces to serve.
