Ingredients

  • 1 1/2 lb. pork steak
  • 1/3 c. corn oil
  • 1/2 c. flour
  • 8 to 10 peeled green chilies
  • 1 can Rotel tomatoes with chilies
  • 2 to 3 cloves garlic
  • Salt
  • Cumin
  • Water

Instructions

  1. Cut the pork steak into bite-sized pieces.
  2. Brown the pork with a little flour in a small amount of corn oil.
  3. When browned, add the remaining flour and oil, stirring until completely mixed.
  4. Chop the green chilies into small pieces.
  5. Put the pork, chilies, garlic, Rotel tomatoes with chilies, and some water into a large pot or pressure cooker.
  6. Add water and stir until the consistency of gravy is reached.
  7. Add salt and cumin to taste.
  8. Simmer until the pork is tender and flavors blend, about 1 hour.
  9. Stir the chili when finished.
  10. Add more water if needed, or simmer with the cover off if too thin, until proper consistency is reached.
