Ingredients

  • 2 lb. corned beef
  • 1 large head cabbage
  • 1 lb. carrots
  • 5 large potatoes
  • 1 large onion
  • 2 or 3 stalks celery
  • peppercorns

Instructions

  1. Cover the corned beef with water in a large pot and bring to a boil.
  2. Cook until the beef is almost done, approximately 2-3 hours depending on size.
  3. Add chopped carrots, potatoes, onion, celery, and peppercorns to the pot.
  4. Simmer until the vegetables are tender and the beef is fully cooked, about 30-45 minutes.
  5. Remove the beef, slice thinly, and serve with the cooked vegetables.
