Tortiere (Pork Pie)

- Cut up potatoes, cook in boiling water for 20 minutes.
- Drain and mash the potatoes.
- Brown the ground pork and drain off excess fat.
- Stir in chopped onion, beef broth, minced garlic, bay leaf, ground ginger, salt, and pepper.
- Cover and simmer for 20 minutes, stirring often.
- Discard the bay leaf, then stir in the mashed potatoes and let cool.
- Roll half of the pastry into a 12-inch circle and line a 9-inch pie pan, trimming to even with the rim.
- Fill the pastry-lined pan with the meat mixture.
- Roll out the remaining dough, slit to vent, and place on top of the filling.
- Trim the top crust to 1/2 inch beyond the rim, seal, flute edges, and bake at 400°F for 30 minutes.
