Ingredients

  • 2 large potatoes
  • 1 lb ground pork
  • 1/2 cup finely chopped onion
  • 1/2 cup beef broth
  • 1 clove garlic
  • 1 bay leaf
  • 1/4 tsp ground ginger
  • 1 recipe pastry

Instructions

  1. Cut up potatoes, cook in boiling water for 20 minutes.
  2. Drain and mash the potatoes.
  3. Brown the ground pork and drain off excess fat.
  4. Stir in chopped onion, beef broth, minced garlic, bay leaf, ground ginger, salt, and pepper.
  5. Cover and simmer for 20 minutes, stirring often.
  6. Discard the bay leaf, then stir in the mashed potatoes and let cool.
  7. Roll half of the pastry into a 12-inch circle and line a 9-inch pie pan, trimming to even with the rim.
  8. Fill the pastry-lined pan with the meat mixture.
  9. Roll out the remaining dough, slit to vent, and place on top of the filling.
  10. Trim the top crust to 1/2 inch beyond the rim, seal, flute edges, and bake at 400°F for 30 minutes.
