Cooked Carrots

Ingredients

  • 2 c. carrots
  • 1 Tbsp. butter
  • 2 Tbsp. honey
  • 1/2 tsp. ginger
  • dash of fresh ground pepper

Instructions

  1. Wash carrots; place them in a small quantity of boiling water. Cook them covered, until tender, about 20 to 30 minutes.
  2. Allow a shorter cooking period for cut-up carrots.
  3. Let them absorb the water in which they are cooked.
  4. Add to 2 cups cooked carrots:
  5. 1 tablespoon butter, 2 tablespoons honey, 1/2 teaspoon ginger and dash of freshly ground pepper.
  6. Simmer carrots in this mixture until well glazed and serve.
