- Wash crawdads and pinch off their tails.
- Discard everything but the tails.
- Pull the mud veins out of the tails.
- Put a large cooker of water on to boil.
- Add sliced onions, seasoning salt, and hot sauce to the boiling water.
- When water comes to a boil, add crawdad tails.
- Boil for about 10 minutes.
- Remove crawdad tails and tear the meat out of the shells to eat.
