Tender Beef Pot Roast

- Place beef in a shallow roasting pan. Sprinkle beef with lemon juice; pierce with a fork. Cover and refrigerate until ready to roast.
- Preheat oven to 325°F (163°C). Remove beef from refrigerator and let it come to room temperature.
- Arrange onions, carrots, potatoes, celery, and green bell pepper around the beef in the roasting pan.
- Mix chopped garlic, dry mustard, and dried thyme, then rub over the beef.
- Pour tomato juice over the ingredients in the pan.
- Cover the pan with foil or a lid and roast in the preheated oven for about 2.5 to 3 hours, or until the beef is tender.
- Remove from oven, let rest for a few minutes, then slice and serve with the vegetables and broth.
