Ingredients

  • 3 Tbsp. butter
  • 1 medium onion, chopped
  • 1 medium bell pepper, diced
  • 2 medium zucchini, sliced
  • 2 medium yellow squash, sliced
  • 14 1/2 oz. can tomatoes, cut up
  • 1/2 tsp. garlic salt
  • salt

Instructions

  1. Melt the butter in a skillet over medium heat, add the chopped onion, and cook until soft.
  2. Stir in the diced bell pepper and cook until softened.
  3. Add the sliced zucchini and yellow squash along with garlic salt, salt, and pepper; cover and simmer until the squash is tender.
  4. Drain the tomatoes, reserve the liquid, and add the tomatoes to the skillet.
  5. Cook for an additional 5 to 8 minutes, adding some of the reserved tomato liquid if needed.
  6. Sprinkle with Parmesan cheese before serving.
