Cranberry Fruit Bread

Ingredients
- 12 oz. fresh or frozen cranberries, halved ⓘ
- 2 c. pecan halves ⓘ
- 1 c. chopped, mixed candied fruit ⓘ
- 1 c. chopped dates ⓘ
- 1 c. golden raisins ⓘ
- 1 Tbsp. grated orange peel ⓘ
- 4 c. all-purpose flour, divided ⓘ
- 2 c. sugar ⓘ
- 1 Tbsp. baking powder ⓘ
- 1 tsp. baking soda
- 1/4 tsp. salt ⓘ
- 2 eggs ⓘ
- 1 c. orange juice ⓘ
Instructions
- Combine cranberries, pecans, candied fruit, dates, raisins, and orange peel with 1/4 cup of flour; set aside.
- In a separate bowl, mix remaining flour, sugar, baking powder, baking soda, and salt; set aside.
- In a large mixing bowl, beat eggs until well combined.
- Add orange juice, shortening, and water to the eggs; mix thoroughly.
- Gradually add the flour mixture to the wet ingredients, stirring just until combined.
- Fold in the cranberry mixture.
- Spoon the batter into three greased and wax paper-lined loaf pans measuring 8 1/2 x 4 1/2 x 2 1/2 inches.
- Bake at 350°F (175°C) for 60 to 65 minutes or until a toothpick inserted into the center comes out clean.
