Ingredients

  • 12 oz. fresh or frozen cranberries, halved
  • 2 c. pecan halves
  • 1 c. chopped, mixed candied fruit
  • 1 c. chopped dates
  • 1 c. golden raisins
  • 1 Tbsp. grated orange peel
  • 4 c. all-purpose flour, divided
  • 2 c. sugar
  • 1 Tbsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 2 eggs
  • 1 c. orange juice

Instructions

  1. Combine cranberries, pecans, candied fruit, dates, raisins, and orange peel with 1/4 cup of flour; set aside.
  2. In a separate bowl, mix remaining flour, sugar, baking powder, baking soda, and salt; set aside.
  3. In a large mixing bowl, beat eggs until well combined.
  4. Add orange juice, shortening, and water to the eggs; mix thoroughly.
  5. Gradually add the flour mixture to the wet ingredients, stirring just until combined.
  6. Fold in the cranberry mixture.
  7. Spoon the batter into three greased and wax paper-lined loaf pans measuring 8 1/2 x 4 1/2 x 2 1/2 inches.
  8. Bake at 350°F (175°C) for 60 to 65 minutes or until a toothpick inserted into the center comes out clean.
