Delight in these rich cookie sandwiches filled with creamy ice cream, topped with chocolate and peanuts for a perfect treat that's ideal for any sweet tooth occasion.
Ingredients
- 6 oz. semi-sweet chocolate
- 16 favorite cookies (3-inch diameter) ⓘ
- 1/3 cup chopped peanuts
- 1 pint favorite ice cream, slightly softened
Instructions
- Line a large baking sheet with waxed paper and set aside.
- In a small saucepan over low heat, melt the semi-sweet chocolate, stirring until smooth.
- Using tongs, dip each cookie into the melted chocolate and shake off excess.
- Place the coated cookies on the prepared baking sheet.
- Sprinkle chopped peanuts on top of the chocolate-coated cookies.
- With a metal spatula, spread the slightly softened ice cream on the flat side of 8 cookies, dividing evenly.
- Top each with a remaining cookie, placing the flat side on the ice cream and pressing lightly.
- Wrap each cookie sandwich with plastic wrap.
- Freeze until firm.
