Delight in these rich cookie sandwiches filled with creamy ice cream, topped with chocolate and peanuts for a perfect treat that's ideal for any sweet tooth occasion.

Ingredients

  • 6 oz. semi-sweet chocolate
  • 16 favorite cookies (3-inch diameter)
  • 1/3 cup chopped peanuts
  • 1 pint favorite ice cream, slightly softened

Instructions

  1. Line a large baking sheet with waxed paper and set aside.
  2. In a small saucepan over low heat, melt the semi-sweet chocolate, stirring until smooth.
  3. Using tongs, dip each cookie into the melted chocolate and shake off excess.
  4. Place the coated cookies on the prepared baking sheet.
  5. Sprinkle chopped peanuts on top of the chocolate-coated cookies.
  6. With a metal spatula, spread the slightly softened ice cream on the flat side of 8 cookies, dividing evenly.
  7. Top each with a remaining cookie, placing the flat side on the ice cream and pressing lightly.
  8. Wrap each cookie sandwich with plastic wrap.
  9. Freeze until firm.
