Ingredients

  • 2 ripe coconuts
  • 1 (14 oz.) can sweetened condensed milk
  • 1 (5 oz.) can evaporated milk
  • 1 tsp. ground cinnamon
  • 5 egg yolks, lightly beaten
  • 3 c. 151 proof (dark) rum

Instructions

  1. Crack open the coconuts with a hammer or mallet until they break into several pieces.
  2. Place the coconut pieces in the oven and heat for 5 minutes at a low setting to loosen the coconut skin from the shell.
  3. Use a small paring knife to remove the coconut from the shell, then discard the shells.
