A light and fluffy corn and chive soufflé with cheesy richness, perfect as an elegant appetizer or side dish for brunch or special occasions.

Ingredients

  • 2 cups corn, scraped from the cob
  • 1/2 cup grated Cheddar cheese, packed
  • 6 egg yolks
  • 1/4 cup minced chives
  • salt
  • fresh ground pepper
  • 8 egg whites

Instructions

  1. Butter a tall 2-quart soufflé dish.
  2. Blend together the corn, grated Cheddar cheese, and egg yolks.
  3. Add minced chives and season with salt and fresh ground pepper to taste.
  4. Beat egg whites to soft peaks, adding cream of tartar when they become foamy.
  5. Stir a quarter of the beaten egg whites into the corn mixture to lighten it.
  6. Gently fold in the remaining egg whites.
  7. Pour the mixture into the prepared soufflé dish.
  8. Bake in a 425°F oven for 10 minutes.
  9. Reduce oven temperature to 375°F and continue baking for 30 minutes.
  10. Serve immediately.
