Corn Chowder(Low-Fat)

Ingredients

  • 1 c. chopped onion
  • 7 c. fresh corn kernels
  • 3 c. chicken stock, with fat skimmed off
  • 1/2 c. chopped red bell pepper
  • 1 Tbsp. dried rosemary
  • 1 tsp. dried thyme
  • 1/8 tsp. black pepper
  • 1/8 tsp. ground red pepper
  • 1/8 tsp. white pepper

Instructions

  1. Preheat large, heavy saucepan over medium heat for about 1 minute. Spray it twice with vegetable oil cooking spray.
  2. Saute the onion for about 5 minutes until translucent. Add 4 cups of the corn and saute for 4 to 5 minutes until it softens a bit.
  3. Add 2 cups chicken stock and cook until the corn can be mashed easily with a fork, about 20 minutes.
