Corn-Rice Bake
Ingredients
Instructions
- Prepare rice with 1 cup water (no salt) as directed on package label.
- Add cream-style corn, eggs, pimentos, onion, salt, pepper and 2 tablespoons melted butter or margarine.
- Put 1/2 of mixture in 9-inch pie pan (or bake dish).
- Sprinkle with 1/2 cup grated cheese.
- Add remaining mixture and top with 1/2 cup more cheese. Dot with 1 tablespoon butter or margarine.
- Bake in moderate oven at 350° for 30 minutes or until golden brown and bubbly.
- Makes 4 to 6 servings.
