Ingredients

  • 5 to 6 lb. roast (beef or venison)
  • 1/4 tsp. saltpeter
  • 1/4 cup warm water
  • 2 Tbsp. sugar
  • 2 cloves minced garlic
  • 2 tsp. paprika
  • 1 Tbsp. pickling spice
  • 3/4 cup salt

Instructions

  1. Combine paprika, pickling spice, salt, sugar, and minced garlic, then add the dissolved saltpeter mixture.
  2. Put the meat in a container such as a crock or slow cooker.
  3. Pour the marinade over the meat and weight it down with a plate.
  4. Leave the meat to cure for 3 weeks, turning occasionally.
  5. If the meat is bloody after curing, rinse it thoroughly.
  6. Cook the meat as a regular roast.
  7. Serve warm or cold.
