Corned Beef Salad Mold

Ingredients

  • 1 small pkg. lemon jello
  • 1/2 c. hot water
  • 1/2 tsp. salt
  • 1 (12 oz.) can corned beef, shredded
  • 2 c. chopped celery
  • 3 Tbsp. chopped onion
  • 1 c. mayonnaise
  • 3 hard-boiled eggs, chopped

Instructions

  1. Soften jello in hot water.
  2. Add salt and chill until partially set.
  3. Add other ingredients.
  4. Chill until firm.
  5. Pour into 1 1/2-quart mold to chill.
  6. Be sure to grease mold with mayonnaise. Serve with your favorite crackers.
  7. Bundt pan makes nice mold but would need to be doubled.
