Ingredients

  • 1 lb margarine
  • 4 cups sifted flour
  • 1 carton (1 lb) creamed cottage cheese
  • 2 cans prepared fruit filling (apricot, prune, pineapple, nut, etc.)

Instructions

  1. Cut margarine into flour as for pie dough.
  2. Add creamed cottage cheese and mix well.
  3. Knead until fairly smooth.
  4. Cover and refrigerate for 2 hours.
  5. Roll out 1/8-inch thick on a well-floured board.
  6. Cut into 2 or 3-inch squares.
  7. Put a small teaspoonful of fruit filling in the center of each square.
  8. Pinch together opposite corners of each square.
  9. Bake on an ungreased cookie sheet at 350°F (175°C) for 10 to 12 minutes.

Tips & Substitutions

For a flakier dough, ensure your margarine is very cold when cutting it into the flour. You can also substitute half of the margarine with butter for a richer flavor. Experiment with different fruit fillings to suit your taste; apricot and prune are classic choices, but feel free to use any of your favorites. Remember to roll the dough evenly to ensure even baking.

Serving Suggestions

These cottage cheese kolaczki make a delightful dessert or snack, perfect for tea time or as a sweet treat after meals. They pair beautifully with a cup of coffee or tea. For a festive touch, dust them with powdered sugar before serving. Consider serving them alongside a fresh fruit salad or a scoop of vanilla ice cream for a delicious contrast.

Storage & Reheating

Store leftover kolaczki in an airtight container at room temperature for up to 3 days. For longer storage, keep them in the refrigerator for up to a week. To reheat, place them in a preheated oven at 300°F (150°C) for about 5-7 minutes until warmed through, which will help restore their crispiness.
