Ingredients

  • 1 lb. baby lima beans
  • 2 medium potatoes, chunked
  • 1 ham hock, chunked
  • 1 tsp. thyme
  • 2 tsp. ground oregano
  • 2 Tbsp. salt
  • 2 Tbsp. fine ground black pepper

Instructions

  1. Soak beans overnight or cover with water 2-inches above beans and bring to boiling.
  2. Boil them for 3 to 4 minutes, then let them sit for an hour.
  3. Drain the water and refill to 2 to 3-inches above beans.
  4. Add all other ingredients, except potatoes.
  5. Bring to boil, then simmer for 30 minutes.
  6. Add potatoes and cook until potatoes are done.
