Ingredients

  • sirloin or round steak
  • 3 eggs
  • 2 Tbsp. Italian cheese
  • 2 lb. fresh spinach or 1 package frozen chopped spinach
  • 1 clove garlic
  • 5 to 6 strips parsley
  • 1/2 cup dry red wine
  • 3 Tbsp. olive oil
  • 3 Tbsp. butter
  • 2 oz. salt pork
  • pepper

Instructions

  1. Slice sirloin or round steak in one piece, butterflied and flattened.
  2. Make an omelet from 3 eggs.
  3. Cook fresh spinach or beat frozen spinach to remove excess moisture.
  4. Cut salt pork into small pieces and saute until crisp.
  5. Coarse chop parsley.
  6. Spread spinach on the flattened steak; place garlic on top of spinach.
  7. Place the omelet on top of the spinach.
  8. Sprinkle cheese on the omelet; place parsley on the cheese.
  9. Add pepper and salt to taste.
  10. Roll up the steak jelly roll style.
  11. Tie the rolled steak with string.
  12. Saute in olive oil and butter for 12 to 15 minutes.
  13. Add red wine and continue to saute for 10 to 15 minutes, covered.
  14. Slice the rolled steak like a jelly roll.
  15. Serve hot or cold.
