Manzo Ripieno(Stuffed Rolled Beef)

Instructions
- Slice sirloin or round steak in one piece, butterflied and flattened.
- Make an omelet from 3 eggs.
- Cook fresh spinach or beat frozen spinach to remove excess moisture.
- Cut salt pork into small pieces and saute until crisp.
- Coarse chop parsley.
- Spread spinach on the flattened steak; place garlic on top of spinach.
- Place the omelet on top of the spinach.
- Sprinkle cheese on the omelet; place parsley on the cheese.
- Add pepper and salt to taste.
- Roll up the steak jelly roll style.
- Tie the rolled steak with string.
- Saute in olive oil and butter for 12 to 15 minutes.
- Add red wine and continue to saute for 10 to 15 minutes, covered.
- Slice the rolled steak like a jelly roll.
- Serve hot or cold.
