Country Wheat Bread

Ingredients

  • 1 1/2 tsp salt
  • 2 pkg quick rise yeast
  • 3 c whole wheat flour
  • 1/2 c honey
  • 1 large egg
  • about 4 c all-purpose flour

Instructions

  1. About 2 hours before serving or day ahead, in a large bowl, combine salt, yeast, and whole wheat flour.
  2. In a small saucepan, over low heat, heat 1 2/3 cups water until very warm (125° to 130°).
  3. Add honey and egg to the warm water and mix well.
  4. Gradually add the liquid mixture to the dry ingredients, stirring until combined.
  5. Gradually add all-purpose flour, about 1/2 cup at a time, until a soft dough forms.
  6. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  7. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
  8. Preheat the oven to 375°F (190°C).
  9. Punch down the dough and shape it into a loaf.
  10. Place the loaf in a greased loaf pan or on a baking sheet.
  11. Allow to rise again until nearly doubled, about 30-45 minutes.
  12. Bake in the preheated oven for 35 minutes or until the bread is golden brown and sounds hollow when tapped.
  13. Remove from oven and cool on a wire rack before slicing.
