Cracker Macaroons

Ingredients

  • 1 c. Quick Quaker oats
  • 4 c. Quaker crackers or unsalted crackers, crushed
  • 1/4 c. shredded coconut
  • 3 Tbsp. butter
  • 3/4 c. sugar
  • 2 eggs
  • 1/2 tsp. salt

Instructions

  1. Mix crackers, oats, coconut and salt.
  2. Cream butter and sugar; add well beaten eggs.
  3. Add the dry ingredients and mix well.
  4. Add flavoring.
  5. Drop from teaspoon on greased and floured pan and bake 25 minutes in slow oven.
  6. Lift from pan at once.
  7. Yields 50 cookies.
