Ingredients

  • 1/2 cup whole cranberry sauce
  • 1/2 teaspoon shredded orange peel
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 slightly beaten egg
  • 1 cup peeled, shredded apple
  • 1/3 cup milk
  • 1/3 cup vegetable oil
  • 1/2 cup powdered sugar

Instructions

  1. Combine cranberry sauce and shredded orange peel; set aside.
  2. Combine flour, sugar, cinnamon, baking soda, baking powder, and 1/4 teaspoon salt in a bowl.
  3. Make a well in the center of the dry ingredients.
  4. In a separate bowl, combine the egg, shredded apple, milk, and vegetable oil.
  5. Add the egg mixture all at once to the dry ingredients; stir just until moistened.
  6. Fill greased 2 1/2-inch muffin cups half full with batter.
  7. Make a well in the center of each muffin with the back of a spoon.
  8. Spoon 2 teaspoons of cranberry filling into each well.
  9. Bake at 375°F (190°C) for 18 to 20 minutes.
  10. In a small bowl, combine powdered sugar and juice to make a drizzling glaze.
  11. Drizzle the glaze over warm muffins before serving.
