Ingredients

  • 2 (1 1/4 lb.) Rock Cornish hens, skin removed
  • 1/4 tsp. pepper
  • 1/4 cup cranberry sauce
  • 1/2 tsp. grated orange peel

Instructions

  1. Preheat oven to 375°F.
  2. Place hens, breast side up, in a roasting pan.
  3. Rub hens evenly with pepper.
  4. Roast about 30 minutes.
  5. Meanwhile, in a saucepan over medium heat, cook cranberry sauce, orange peel, and garlic for about 3 minutes until the cranberry sauce melts.
  6. Brush hens evenly with the cranberry-orange sauce.
  7. Continue to roast for 15 minutes longer until hens are tender.
