Ingredients

  • 3 oz. package raspberry Jell-O
  • 3/4 cup boiling water
  • 8 oz. can crushed pineapple, drained
  • 16 oz. can whole cranberry sauce
  • 1 red apple, unpeeled, coarsely grated
  • 1 tablespoon grated orange rind
  • 1/8 teaspoon salt
  • 1/8 teaspoon cinnamon
  • dash of cloves

Instructions

  1. Dissolve the raspberry Jell-O in boiling water and let it cool.
  2. Stir in the crushed pineapple, cranberry sauce, grated apple, orange rind, salt, cinnamon, and cloves.
  3. Spoon the mixture into a lightly oiled 4-cup mold.
  4. Cover and chill until the Jell-O is firm.
  5. Unmold onto lettuce leaves and garnish with fresh cranberries and orange rind strips, if desired.
