Cranberry Bread(Christmas Bread)

Ingredients

  • 2 c. all-purpose flour
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. soda
  • 1 c. sugar
  • 1 beaten egg
  • 2 Tbsp. melted shortening
  • 1/2 c. orange juice
  • 2 Tbsp. hot water
  • 1/2 tsp. grated orange rind or bottled orange peel
  • 1/2 c. chopped nuts
  • 1 c. cranberries, halved

Instructions

  1. Sift together the first 5 ingredients.
  2. Add without stirring the beaten egg, shortening, orange juice and hot water.
  3. Combine only until dry ingredients are moistened.
  4. Fold in the orange rind, chopped nuts and cranberries.
  5. Bake at 325° for about an hour.
  6. Cool.
  7. Wrap in aluminum foil and freeze.
