Ingredients

  • 1 cup yellow corn meal
  • 1 cup flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 2 tablespoons oil
  • 1 slightly beaten egg
  • 1/2 cup milk
  • 1 cup thick whole cranberry sauce
  • grated rind of 1 orange

Instructions

  1. Preheat oven to 425°F.
  2. Sift together the corn meal, flour, baking powder, salt, and sugar into a large bowl.
  3. Add the oil, beaten egg, milk, cranberry sauce, and grated orange rind to the dry ingredients.
  4. Mix just enough to dampen all the ingredients.
  5. Pour the batter into a greased 8-inch square pan.
  6. Bake for 25 minutes or until golden brown.
