Ingredients

  • 1 pkg. white cake mix
  • 1 1/3 c. water
  • 1/3 c. vegetable oil
  • 3 eggs
  • 1 Tbsp. grated orange peel
  • 1 c. fresh or frozen cranberries, thawed and coarsely chopped

Instructions

  1. Combine the cake mix, water, vegetable oil, eggs, and grated orange peel in a large bowl. Mix well.
  2. Stir in the cranberries until evenly distributed.
  3. Pour the batter into two greased 9-inch round baking pans.
  4. Bake at 350°F (175°C) for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool the cakes for 10 minutes in the pans, then remove and cool completely on wire racks.
