Ingredients

  • 1 c. cranberries
  • 1 c. all-purpose flour
  • 1 c. whole wheat flour
  • 1/2 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3 Tbsp. vegetable oil
  • 3/4 c. orange juice
  • 1 egg
  • 2 Tbsp. chopped nuts
  • 1 Tbsp. powdered sugar

Instructions

  1. For more variety, try topping your English muffin with part skim Mozzarella cheese or low-fat cottage cheese, followed by a pineapple ring, spiced apple ring or other sliced fruit.
