Instructions
- Score the meat in a crisscross pattern.
- Rub the sides of the meat only with cracked pepper.
- Place the meat in a Dutch oven or roasting pan and brown over medium heat on all sides for about 15 minutes.
- Pour cranberry juice over the meat and add fresh cranberries.
- Cover and cook in a 325°F (163°C) oven for 2 hours until tender.
- Remove the meat and place on a warm platter.
- Add a small amount of cornstarch to the cooking juice and cook until thickened to make a gravy.
