Cranberry Pepper Roast

Ingredients

  • 4 lb beef tip roast
  • 2 Tbsp cracked pepper
  • 3 Tbsp salad oil
  • 2 2/3 cups cranberry cocktail or juice
  • 1 cup fresh cranberries

Instructions

  1. Score the meat in a crisscross pattern.
  2. Rub the sides of the meat only with cracked pepper.
  3. Place the meat in a Dutch oven or roasting pan and brown over medium heat on all sides for about 15 minutes.
  4. Pour cranberry juice over the meat and add fresh cranberries.
  5. Cover and cook in a 325°F (163°C) oven for 2 hours until tender.
  6. Remove the meat and place on a warm platter.
  7. Add a small amount of cornstarch to the cooking juice and cook until thickened to make a gravy.
