Ingredients

  • 4 1/2 cups granulated sugar
  • 13 oz. can evaporated milk
  • 3 (6 oz.) packages chocolate chips
  • 1 lb. butter or margarine
  • 3 teaspoons vanilla

Instructions

  1. Bring the granulated sugar and evaporated milk to a rapid boil in a large pan. Boil for 9 minutes or until soft ball stage (135°C), stirring constantly.
  2. Remove from heat and add the chocolate chips, butter or margarine, and vanilla. Stir until thoroughly blended.
  3. Using an electric mixer at low speed, beat the mixture until combined. Then beat at medium speed for about 10 minutes until it begins to thicken.
  4. Pour the fudge into a buttered 9 x 13-inch pan. Chill in the refrigerator for about 2 hours until firm.
  5. Once firm, cut into pieces and serve.

Tips & Substitutions

To ensure a smooth fudge, make sure to stir constantly while boiling the sugar and evaporated milk. If you prefer a richer flavor, consider using dark chocolate chips instead of semi-sweet. For a nutty twist, you can fold in chopped pecans, which pairs beautifully with this fudge. If your fudge isn't setting, try refrigerating it longer.

Serving Suggestions

Cut the fudge into bite-sized pieces for easy serving, and consider adding a sprinkle of sea salt on top for contrast. It makes a delightful treat alongside a cup of coffee or as a sweet ending to a meal. For a fun dessert platter, serve it with slices of Jamie's Pumpkin Bread or Cherries And Berries On A Cloud.

Storage & Reheating

Store leftover fudge in an airtight container at room temperature for up to a week. For longer storage, you can freeze the fudge by wrapping it tightly in plastic wrap and placing it in a freezer bag. To reheat, microwave small pieces for a few seconds until slightly softened.

Frequently Asked Questions

Can I use a different type of chocolate for this fudge?

Yes, you can use milk chocolate or dark chocolate chips according to your preference. Keep in mind that the sweetness level will vary; if using dark chocolate, you might want to adjust the sugar slightly.

Why is my fudge grainy?

Graininess can occur if the sugar didn't fully dissolve or if it was stirred too vigorously during cooking. Make sure to stir gently but consistently, and ensure that the mixture reaches the soft ball stage before adding other ingredients.

Can I add flavors or mix-ins to the fudge?

Absolutely! You can enhance the flavor by adding extracts like almond or peppermint. Additionally, mix-ins like crushed cookies or dried fruits can provide interesting textures and flavors, making your fudge even more delightful.
