Ingredients

  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 3 cups sugar
  • 2 cups pumpkin (canned)
  • 1 cup unsweetened applesauce
  • 2/3 cup water
  • 1 cup egg substitute
  • 1 cup walnuts

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two loaf pans.
  2. In a large bowl, mix the dry ingredients: flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, combine egg substitute, walnuts, water, applesauce, and pumpkin.
  4. Pour the wet mixture into the dry ingredients all at once and blend lightly until just combined.
  5. Divide the batter evenly between the two prepared loaf pans.
  6. Bake for about 1 hour, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool slightly before removing from pans and slicing.
