Cream Cheese Crackers

Ingredients

  • 3 1/2 cups all-purpose flour
  • 7 oz cream cheese
  • 2/3 cup sour cream
  • 1 cup butter, cut into pieces
  • 2 None egg yolks
  • None None sea salt, for sprinkling

Instructions

  1. Combine flour, cream cheese, sour cream and butter. Mix using the dough hook of a mixer. Turn out onto a lightly floured work surface and knead until smooth. Wrap in plastic wrap and chill for 45 mins.
  2. Preheat oven to 325°F. Divide dough into 4 pieces. Wrap 3 pieces in plastic wrap and chill.
  3. On a lightly floured work surface, roll out dough to 2/3 inch thick. Using a 2 inch round cookie cutter, cut out 30 crackers. Place on 1-2 baking trays lined with parchment paper. Prick crackers with a fork. Beat egg yolks with 1-2 tbsp cold water then brush over crackers. Sprinkle with sea salt and bake for 18-20 mins. Let cool on trays for 10 min then transfer to a wire rack to cool completely.
  4. Repeat with remaining dough.
