Creamed Chicken Over Cornbread

Ingredients

  • 2 Tbsp. margarine
  • 2 Tbsp. all-purpose flour
  • 1 1/2 c. milk
  • 3 c. chopped, cooked chicken
  • 1 can cream of mushroom soup, undiluted
  • 1 (2 oz.) jar diced pimiento, drained
  • shredded Cheddar cheese
  • chopped green onions

Instructions

  1. Melt margarine in a heavy saucepan over low heat; add flour, stirring until smooth.
  2. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
  3. Stir in chicken, mushroom soup and pimiento; cook, stirring constantly, just until thoroughly heated.
