Ingredients

  • 2 lb. potatoes, peeled and cut into 1-inch cubes
  • 3/4 c. evaporated milk
  • 1/4 c. butter
  • 1 c. shredded Cheddar cheese
  • salt and pepper, to taste

Instructions

  1. Cook potatoes in a large saucepan, covered with water, for about 15-20 minutes or until tender.
  2. Drain the cooked potatoes.
  3. Return potatoes to the saucepan and add evaporated milk and butter.
  4. Beat with a hand mixer until smooth and creamy.
  5. Stir in shredded Cheddar cheese and season with salt and pepper.
