Ingredients

  • 2/3 cup shortening
  • 2 cups sugar
  • 3 eggs
  • 2 cups buttermilk
  • 2 teaspoons soda
  • 1 teaspoon baking powder
  • pinch of salt
  • 1 teaspoon cloves
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 2 teaspoons cocoa
  • 2 cups jam

Instructions

  1. Cream sugar and shortening until well combined.
  2. Add eggs one at a time, mixing well after each addition.
  3. Combine soda with buttermilk and let stand until it foams.
  4. Mix dry ingredients: flour, baking powder, salt, cloves, allspice, cinnamon, and cocoa.
  5. Gradually add dry ingredients to the creamed mixture, one cup at a time, beating after each addition.
  6. Add buttermilk a little at a time, folding in the jam last.
  7. Pour batter into prepared cake pans and bake at 350°F for 35 minutes.
